Method

  1. 1

Use your ready made kimchi (see the base recipe). Squeeze out the liquid and chop it small.

  2. 2

Take your ready made flour tortillas (see the base recipe). Lay 2 on a board and scatter the cheddar and mozzarella evenly, leaving a 1 cm border. Top with the kimchi and spring onions, then cover with the other 2 tortillas.

  3. 3

Melt half the butter in a large non stick frying pan over a medium heat. Cook one quesadilla for 2 to 3 minutes until golden underneath.

  4. 4

Flip and cook for 2 to 3 minutes more until the cheese has fully melted.

  5. 5

Repeat with the remaining butter and quesadilla.

  6. 6

Rest for 1 minute, then cut into wedges and serve with soured cream or a spicy mayo.

Tips

  • Squeeze the kimchi dry so the tortilla stays crisp.
  • Use a lid for the first minute to help the cheese melt before the outside burns.
  • Add cooked chicken or bacon for extra protein.

Storing and freezing

Best eaten straight away. Keep leftovers in the fridge for up to 1 day and reheat in a dry pan until steaming hot all the way through. Do not freeze.

Questions

Can I use corn tortillas?

Yes. They are smaller and more fragile, so fill them lightly and fold in half. This also makes the dish gluten free.

Is it vegetarian?

No, because kimchi contains fish sauce. Use a vegan kimchi from the tips on the base recipe for a vegetarian version.

Can I use other cheeses?

Yes. Monterey Jack, Red Leicester or Gruyere all melt beautifully.

How do I stop them going soggy?

Drain the kimchi well, cook over medium heat and serve straight away.
