Method
- 1
Take the pork chops out of the fridge 20 minutes before cooking. Pat dry, rub with 1 tbsp of the olive oil and season well with salt and pepper.
- 2
Heat a griddle pan or barbecue until very hot. Cook the corn for 10 to 12 minutes, turning, until charred in places. Cool slightly, then cut the kernels off the cobs.
11 min - 3
Cook the chops over a medium high heat for 5 minutes on one side. Turn and cook for 3 minutes.
8 min - 4
Brush both sides with your ready made BBQ sauce (see the base recipe) and cook for 2 to 3 minutes more per side, until sticky and cooked through, with no pink inside.
5 min - 5
Rest the chops on a warm plate for 5 minutes.
- 6
Mix the corn, tomatoes, red onion, lime juice, coriander and remaining oil. Season with salt. Serve the chops with the salad.
Tips
- Add the sauce only for the last few minutes of cooking. It burns easily over high heat.
- Do not overcook pork chops. A probe thermometer should read 70C in the thickest part, and a short rest finishes the cooking.
- No griddle pan? Roast the corn at 220C for 25 minutes and grill the chops under a hot grill.
Storing and freezing
Keeps 2 days in the fridge, cooled within 2 hours. Reheat the pork until steaming hot all the way through. Eat the salad cold within a day.
Questions
Can I use boneless chops?
Yes. Boneless chops cook faster, so check them after 4 minutes per side. Thick cut chops stay juiciest.
Can I cook these on a barbecue?
Yes. Cook over medium heat with the lid down, adding the sauce for the last 5 minutes. Keep a cooler zone for flare ups.
Is this gluten free and dairy free?
Yes, with the BBQ sauce made as in the base recipe. All the other ingredients are plain.
