Method

  1. 1

Season the chicken with salt. Heat the oil in a large frying pan over a high heat and cook the strips for 6 to 7 minutes, turning, until golden and there is no pink inside.

  2. 2

Pour in your ready made salsa a la diabla (see the base recipe), lower the heat and simmer for 3 minutes until the chicken is coated.

    3 min
  3. 3

Warm your ready made black beans (see the base recipe) and the cooked rice in a pan or microwave until steaming hot all the way through.

  4. 4

Warm your flour tortillas (see the base recipe) in a dry pan for 20 seconds a side so they fold easily.

  5. 5

Down the middle of each tortilla layer rice, beans, chicken and avocado, then add coriander.

  6. 6

Fold in the sides, roll up tightly and toast seam side down in the pan for 1 minute. Cut in half and serve.

Tips

  • Warm the tortillas so they do not tear when you roll them.
  • Do not overfill, fold the sides in first then roll away from you.
  • Cool rice quickly within 1 hour if making ahead and only reheat it once.
  • Wrap in foil to keep warm for a packed lunch.

Storing and freezing

Cool within 1 hour and keep wrapped in the fridge for up to 2 days. Reheat until steaming hot all the way through. Freeze (without the avocado) for up to 2 months.

Questions

Can I make these ahead?

Yes. Roll, wrap in foil and chill for up to 2 days. Reheat in a 180C oven for 20 minutes until steaming hot.

Can I use pork or beef?

Yes. Sliced pork shoulder or steak work, adjusting the cooking time until completely cooked through.

How do I make it gluten free?

Use large gluten free wraps instead of flour tortillas. The sauce and beans are gluten free.
