Method
- 1
Heat the oil in a frying pan over a medium heat. Fry the red pepper and spring onions for 5 minutes until soft. Add the cumin and cook for 30 seconds.
5 min - 2
Stir in the cooked rice and heat through for 3 minutes until steaming hot. Tip into a bowl.
- 3
Warm your ready made refried beans (see the base recipe) in the pan with a splash of water for 3 minutes.
3 min - 4
Warm the ready made flour tortillas (see the base recipe) for 20 seconds each side so they bend without tearing.
- 5
On each tortilla, spoon a line of beans, rice mix and cheese just below the middle. Fold in the sides, roll up tightly from the bottom.
- 6
Brown the burritos seam side down in a dry pan for 2 minutes each side. Cut in half and serve with your ready made classic guacamole (see the base recipe).

Tips
- Do not overfill. Four to five generous spoonfuls is plenty, and the tortilla needs to roll tightly.
- Cool rice quickly and keep it in the fridge. Reheat it only once and until steaming hot.
- Wrap in foil or baking paper for a lunchbox and eat within a day.
Storing and freezing
Wrap cooled burritos individually and keep in the fridge for up to 3 days. Freeze for up to 2 months and reheat from frozen until steaming hot all the way through.
Questions
Can I freeze burritos?
Yes. Wrap each cooled burrito tightly in foil and freeze for up to 2 months. Reheat in the oven at {t190} for 25 to 30 minutes, until piping hot in the centre.
Can I make them vegan?
Yes. Leave out the cheese or use a dairy free melting cheese. The beans, rice and guacamole are plant based.
Can I use corn tortillas?
Not really. Corn tortillas are too small and crack when rolled this way. Use large flour tortillas, or gluten free wraps.
