Method
- 1
Make your ready made tikka marinade and flour tortillas first (see the base recipes). Stir the chicken through 150 g of the marinade and chill for at least 1 hour.
- 2
Heat half the oil in a large frying pan. Cook the chicken, pepper and onion for 8 to 10 minutes until charred and the chicken is white all the way through.
9 min - 3
Lay a tortilla in a clean dry pan. Sprinkle with a quarter of the cheddar, then a quarter of the filling.
- 4
Top with another tortilla, press down, and cook for 2 to 3 minutes per side until crisp and golden and the cheese melts.
5 min - 5
Repeat with the remaining tortillas, then cut into wedges.
- 6
Mix the yoghurt and mint with a pinch of salt and serve for dipping.
Tips
- Use a heavy pan and press down gently to get an even crisp.
- Do not overfill or the filling will spill out.
- Keep finished quesadillas warm in a low oven.
Storing and freezing
Best eaten fresh. Leftover filling keeps in the fridge for up to 3 days; reheat until steaming hot all the way through.
Questions
Can I use paneer instead of chicken?
Yes. Dice 350 g paneer, marinate and fry until golden for a vegetarian version.
Can I use corn tortillas?
Yes, but they are more delicate. Warm them first, and use smaller ones.
Can I freeze them?
Yes, assembled and uncooked, for 1 month. Cook from frozen over a low heat until hot all the way through.
