  4. 4

Warm a flour tortilla (see the base recipe) in a dry pan. Cover half with cheese and a quarter of the steak, fold over and press down.

  5. 5

Cook for 2 minutes each side until the cheese melts and the tortilla is golden. Repeat with the rest.

  6. 6

Cut into wedges and serve with salsa taquera (see the base recipe) and lime.

Tips

  • Do not overfill, or the cheese leaks out and burns.
  • Use a heavy pan and press down with a spatula for an even crisp.
  • Add sliced jalapeños inside for more heat.

Storing and freezing

Best eaten hot. Cooked leftovers keep in the fridge for up to 2 days and should be reheated until steaming hot all the way through.

Questions

Why flour tortillas for Sonoran quesadillas?

Sonora is wheat country in northern Mexico, and its thin, large flour tortillas are famous. Quesadillas there are often made with them and chopped meat.

Can I make them with corn tortillas?

Yes. Use two small corn tortillas per quesadilla, making them gluten free if the other ingredients are, though the texture will be different.
