Method
- 1
Toss the pork slices with your ready made al pastor marinade (see the base recipe). Cover and chill for at least 4 hours.
- 2
Heat the oil in a large pan over a high heat and cook the pork in two batches for 3 to 4 minutes per side until deeply charred and cooked through. Chop it small and stir in the pineapple.
8 min - 3
Heat the oven to 200°C (180°C fan). Spread the broken tostadas over a large oven tray or ovenproof dish. Warm in the oven for 3 minutes.
3 min - 4
Warm the queso dip in a small pan, stirring, until smooth and steaming hot all the way through.
3 min - 5
Scatter the pork and pineapple over the chips. Drizzle with the queso.
- 6
Top with the tomato and red onion, avocado, jalapeños and coriander, and serve immediately with a squeeze of lime.
Tips
- Serve straight away. Wet toppings soften the chips within minutes.
- Warm the chips first for extra crispness before adding toppings.
- Keep the tomato and avocado separate until the last minute so they stay fresh.
- For a milder version, leave out the jalapeños.
Storing and freezing
Best eaten straight away. Leftover cooked pork keeps in the fridge for up to 3 days, cooled within 1 to 2 hours. Reheat until steaming hot all the way through. Assembled nachos do not keep.
