Method
- 1
Toss the chicken in 90 ml of your ready made pollo asado marinade (see the base recipe). Chill for 1 to 4 hours.
60 min - 2
Cook the chicken in the oiled pan over a high heat for 6 to 7 minutes per side until charred and cooked through, at 75C in the thickest part. Rest for 5 minutes, then shred or slice thinly.
13 min - 3
Pour your ready made tortilla soup base (see the base recipe) into a large pan and heat until it simmers. Taste and adjust with salt and a squeeze of lime.
7 min - 4
Crisp the tostada pieces (see the base recipe for tostadas and totopos) in a 180°C (160°C fan) oven for 4 minutes if they have gone soft.
4 min - 5
Divide the chicken, avocado and queso fresco between 4 bowls. Ladle the hot broth over the top.
- 6
Finish with a handful of tortilla strips, coriander and a lime wedge, and eat while the strips are still crunchy.
Tips
- Add the tortilla strips at the table, not in the pan, so they stay crisp as long as possible.
- A drizzle of crema or a spoonful of chipotle adobo takes the soup in a smoky direction.
- Reserve the cooking juices from the pan and stir them into the broth for extra flavour.
Storing and freezing
Keep the broth and chicken in the fridge for up to 3 days and reheat the soup until boiling. Freeze the broth for up to 3 months. Keep the toppings fresh and separate.
Questions
Can I make it dairy free?
Yes. Leave out the queso fresco and add more avocado or a spoon of dairy free yoghurt.
What can I use if I cannot find queso fresco?
Crumbled feta or mild ricotta salata works well. Feta is saltier, so add it a little at a time.
Can I use leftover roast chicken?
Yes, it still works. Toss the shredded chicken with 3 tbsp of the marinade, warm it in a pan for 3 minutes, and serve as above.
