Method

  1. 1

Warm your ready made refried beans (see the base recipe) in a small pan with a splash of water until smooth and hot. Reheat your tostadas on a baking tray at 160°C (140°C fan) for 3 minutes if they have softened.

  2. 2

Heat the oil in a frying pan over a high heat and cook the prawns for 2 minutes.

    2 min
  3. 3

Add 200 ml of your ready made red enchilada sauce (see the base recipe) and cook for 1 to 2 minutes until the prawns are cooked through and coated.

    1 min 30 s
  4. 4

Squeeze the lime juice over the sliced onion with a pinch of salt and leave for 5 minutes.

  5. 5

Spread each tostada with refried beans, add lettuce and a few prawns with sauce, then avocado, onion and coriander. Eat straight away, because tostadas soften quickly.

Tips

  • Assemble at the table or at the last minute. A tostada left to stand becomes soggy.
  • Serve three per person for a main course or one each as a starter with fewer prawns.
  • Slice the prawns in half lengthways if they are very large, so they sit on the tostada.
  • Add a squeeze of lime and a dash of hot sauce at the end for brightness.

Storing and freezing

Keep the prawns and beans in the fridge separately for up to 1 day. Do not store assembled tostadas. Reheat the prawns until steaming hot before serving.

Questions

Can I use shop bought tostadas?

Yes. Look for 100 per cent corn tostadas and check the label for wheat. Warm them briefly to crisp them up.

Can I make these vegan?

Swap the prawns for diced smoked tofu or roasted mushrooms tossed in the sauce. The beans, sauce and tostadas are already vegan.

How do I stop the beans going cold?

Spread them on while still hot, then add cold toppings last. They stay warm long enough to eat.

Can I use fish instead of prawns?

Yes. Use flaked cooked white fish or tuna and warm it gently in the sauce.
