Method
- 1
Heat the oil in a non stick frying pan over a medium high heat until shimmering. Crack in the eggs, in two batches if needed.
- 2
Fry for 2 to 3 minutes, spooning oil over the whites, until the edges are lacy and crisp and the yolks are still runny.
2 min 30 s - 3
Lay your ready made tostadas (see the base recipe) on plates and top with sliced avocado.
- 4
Slide the eggs on top. Season with a pinch of salt.
- 5
Spoon over your ready made salsa macha (see the base recipe), with a little of its oil. Scatter with the coriander and serve with lime.
Tips
- Hot oil gives the crisp, lacy edges. Wait until it shimmers before adding the eggs.
- Salsa macha is rich, so start with a teaspoon per egg.
- Use fresh eggs for neat whites.
Storing and freezing
Best eaten straight away. The salsa macha keeps as per its own recipe in the fridge.
Questions
Is this very spicy?
Moderately. The chilli heat is mellowed by the oil, avocado and egg.
Can I use ordinary tortillas?
Yes, warm corn tortillas work well in place of tostadas.
