  4. 4

Warm the tortillas in a dry pan for 20 seconds a side.

  5. 5

Serve the prawns and sauce with tortillas, coriander, radish and lime wedges.

Tips

  • Pat the prawns dry for a good sear and do not crowd the pan.
  • Add the prawns to the sauce at the end, as they toughen quickly.
  • Use a squeeze of lime to brighten the sauce at the table.

Storing and freezing

Best eaten fresh. Keeps 1 day in the fridge and must be reheated until steaming hot all through, so it is best to cook only what you need.

Questions

Can I use cooked prawns?

Yes, add them to the warm sauce for 1 to 2 minutes just to heat through. Longer cooking makes them rubbery.

What can I serve it with?

Rice, tortillas, or a salad of radish, cucumber and lime. It is also good over boiled new potatoes.

Can I use frozen prawns?

Yes, defrost fully in the fridge overnight, then drain and dry them before frying.
