Method

  1. 1

Heat the oven to 200°C (180°C fan). Spread the broken tostadas (see the base recipe) over a large baking tray.

  2. 2

Crisp the carnitas (see the base recipe) in a dry frying pan for 3 to 4 minutes until browned at the edges and steaming hot all the way through. Scatter over the chips.

  3. 3

Warm the queso (see the base recipe) in a small pan over a low heat, stirring, for 3 to 4 minutes until pourable and steaming.

Pour the queso over the chips and pork. Scatter with tomato, red onion, jalapenos, spring onion and coriander and serve with lime wedges.

Tips

  • Warm the chips first so the queso does not turn them soggy straight away.
  • Layer a second tray of chips and toppings rather than piling high. Soggy nachos at the bottom are the usual problem.
  • Serve at once, because queso thickens as it cools.

Storing and freezing

Nachos do not keep. Store leftover pork and queso separately in the fridge for 3 days and reheat until steaming hot.

Questions

How do I stop nachos going soggy?

Use sturdy chips, add the queso hot and serve straight away. Keep wet toppings such as tomato for the top.

Can I use shop bought chips?

Yes, choose plain corn chips and check the label for gluten free if you need it.

Is it spicy?

Not by default. The heat comes from the pickled jalapenos, so use fewer for a mild version.
