Divide the rice and beans between 4 bowls.

  5. 5

Top with chicken, prawns, avocado, tomatoes and sweetcorn, and serve with lime wedges.

Tips

  • Cook the rice and beans ahead and chill them quickly. They reheat in minutes while you cook the prawns.
  • Rice must be reheated only once, until steaming hot all the way through.
  • Add a spoonful of salsa and plain yoghurt or dairy free yoghurt if you like it creamy.

Storing and freezing

Chill leftover rice, beans and chicken within 1 hour and eat within 1 day. Reheat rice only once. Prawns are best eaten fresh.
