Method
- 1
Arrange the lettuce leaves, cucumber, red pepper and radishes on a large platter or 4 plates.
- 2
Toss the pollo deshebrado (see the base recipe) with the juice of 1 lime and a pinch of salt, and the prawns with the other lime and a pinch of salt.
- 3
Pile the chicken and prawns over the salad.
- 4
Thin the creamy avocado salsa (see the base recipe) with 2 to 3 tablespoons of water until pourable, then drizzle all over.
- 5
Scatter with pumpkin seeds and coriander and serve straight away.
Tips
- Keep the dressing separate until you serve so the lettuce stays crisp.
- Use cooked chilled chicken straight from the fridge for a cold salad, or warm it slightly if you prefer.
- Toast the pumpkin seeds in a dry pan for 2 minutes until they pop.
Storing and freezing
Eat fresh. Keep undressed components in the fridge for up to 1 day. Dressed salad does not keep.
Questions
Can I swap the prawns?
Yes. Use extra chicken, hard boiled eggs or flaked cooked white fish.
Is this a filling salad?
Yes. Chicken and prawns are lean protein, and the avocado dressing, seeds and crunchy vegetables make it satisfying without any bread or rice.
Can I make it ahead?
Prep the ingredients ahead and assemble at the table. Dress just before serving.
