  1. 1

Check the mussels. Discard any with cracked shells or any open ones that do not close when tapped firmly on the worktop.

  2. 2

  3. 3

Stir in your ready made guajillo adobo paste (see the base recipe) and fry for 2 minutes, then add the tomatoes and vegetable stock. Simmer for 10 minutes until slightly thickened.

  5. 5

Add the prawns, cover and cook for 3 to 4 minutes more, until the prawns are pink, the squid is opaque and the mussels have opened. Discard any mussels that stay shut.

  6. 6

Stir in the lime juice and coriander. Serve in wide bowls with warm corn tortillas (see the base recipe).

Tips

  • Cook the sauce first, then add the seafood in order of cooking time: fish and squid, then mussels, then prawns.
  • Do not stir too much after the cod goes in, or it breaks up.
  • Squid turns tough with long cooking. It needs either about 3 minutes or an hour, so keep it short.

Storing and freezing

Best eaten fresh. If you must keep leftovers, cool within 1 hour and keep in the fridge for up to 1 day, reheated until steaming hot all the way through. Do not freeze.

Questions

Can I use frozen seafood mix?

Yes. A bag of frozen mixed seafood works. Thaw fully, drain and add it near the end for 3 to 4 minutes only.

Is this dish dairy free and gluten free?

Yes. It uses no dairy, egg or gluten, provided the vegetable stock cube is gluten free and the tortillas are pure corn. It contains shellfish and fish.

What can I serve with it?

Warm corn tortillas, rice or crusty bread (not gluten free). The broth is made for mopping.
