Method

  1. 1

Warm the tostadas in a low oven for 3 minutes so they are crisp.

    2 min
  3. 3

Add your ready made salsa a la diabla (see the base recipe) and toss for 1 to 2 minutes until glazed.

    1 min 30 s
  4. 4

Spread each tostada with your ready made guacamole (see the base recipe).

  5. 5

Top with lettuce, the prawns and a spoon of extra sauce, then scatter over the radish. Serve straight away with lime wedges.

Tips

  • Assemble at the last moment, a tostada soaks up the sauce and goes soft within minutes.
  • Chop the prawns smaller if serving as party canapés.
  • Chill the guacamole for 10 minutes first, it makes a firmer base.
  • A pinch of salt on the lettuce helps the topping season evenly.

Storing and freezing

Best eaten fresh. Keep cooked prawns in the fridge for up to 1 day and do not store assembled tostadas.

Questions

Can I make them ahead?

Cook the prawns and keep them chilled for up to 1 day. Assemble the tostadas just before serving.

Are they gluten free?

Yes, if your tostadas are made from corn only. The base recipe uses masa harina and is gluten free.

Can I use fish or chicken?

Yes. Flaked cooked white fish or shredded chicken tossed in the sauce both work as the topping.
