  4. 4

Warm your corn tortillas (see the base recipe) in a dry pan for 30 seconds on each side.

  5. 5

Toss the roasted cauliflower with the remaining lime juice. Spread a spoonful of your creamy avocado salsa (see the base recipe) over each tortilla.

  6. 6

Top with cauliflower, red onion and coriander, and serve with lime wedges.

Tips

  • A hot tray gives the cauliflower a head start on browning. Do not crowd it, or the florets steam and go soft.
  • Cut florets small and even, about 3 cm, so they roast at the same speed.
  • Add a drained tin of black beans to the tray for the last 10 minutes for a heartier taco.
  • Use the leaves and stalk too. Chop them and roast alongside, they go crisp and sweet.

Storing and freezing

Keep the roasted cauliflower in the fridge for up to 3 days, cooled within 1 to 2 hours. Reheat on a hot tray in the oven until crisp and steaming hot throughout.

Questions

Are these tacos vegan?

Yes. Cauliflower, spice mix, corn tortillas and avocado salsa contain no animal products. Check that any bought tortillas are made without lard.

Can I make the cauliflower in an air fryer?

Yes. Cook the coated florets at 200C for 12 to 15 minutes, shaking halfway, until browned and tender. Work in batches so they are not crowded.

Can I use broccoli or sweet potato instead?

Yes. Broccoli roasts in about 18 minutes and gets crisp tips. Sweet potato cubes need 30 to 35 minutes and give a sweeter taco that works well with the smoky spice.
