Method
- 1
Lay four tortillas (see the base recipe) on a board. Spread each with 3 tablespoons of cajeta, leaving a 2 cm border.
- 2
Arrange sliced banana over the cajeta, sprinkle with cinnamon and top each with a second tortilla, pressing down.
- 3
Melt a little butter in a large frying pan over a medium heat.
- 4
Cook each quesadilla for 2 minutes until golden underneath. Flip carefully and cook for 1 to 2 minutes more until the cajeta is melted and the bananas are hot.
4 min - 5
Slide onto a board, dust with icing sugar and cut into wedges. Serve hot.
Tips
- Spread the cajeta thinly or it will escape. Press the edges together to seal.
- Use ripe, yellow bananas with a few spots for the best sweetness.
- Cook on a medium heat. Caramel burns easily.
- Add a handful of toasted nuts if nobody has an allergy, or toasted coconut flakes for a nut free crunch.
Storing and freezing
Best eaten fresh while the caramel is runny. Leftovers keep in the fridge for 1 day and reheat in a pan until steaming hot all the way through.
Questions
What is cajeta?
Cajeta is a thick Mexican caramel traditionally made by slowly cooking goat's milk with sugar. Dulce de leche, made from cow's milk, is an easy substitute.
Can I make this dairy free?
Yes. Use a dairy free caramel or date caramel and cook in oil or dairy free spread instead of butter. Check the ingredient list for milk.
Can I use other fruit?
Yes. Sliced strawberries, apple or poached pears work well, or a spoonful of chocolate spread for a different dessert.
