Method

  1. 1

Put the flour, ground almonds, 80 g icing sugar and salt in a bowl. Rub in the cold butter with your fingertips, then add the vanilla and press together into a smooth dough. Work quickly so the butter stays cold.

  2. 2

Wrap the dough and chill for 30 minutes until firm enough to shape.

  3. 3

Heat the oven to 170°C (150°C fan) and line two baking trays with baking paper.

  4. 4

Pinch off hazelnut sized pieces of dough, about 12 g each. Roll each into a short sausage, thinner at the ends, and bend into a crescent. Place on the trays 2 cm apart.

  5. 5

Bake for 12 to 14 minutes until just pale gold at the edges. They stay pale on top.

  6. 6

Mix the 100 g icing sugar with the vanilla in a shallow dish, rubbing in the vanilla paste. Leave the biscuits on the tray for 5 minutes, then roll them gently in the vanilla sugar while still warm, as the sugar sticks best then. Cool on a rack and store in a tin for up to 2 weeks.
