Method

  1. 1

Boil the whole potatoes in salted water for 15 to 20 minutes until just tender. Drain, cool for 10 minutes, then peel if you like and slice about 5 mm thick. Potatoes cooked the day before fry even better.

  2. 2

Heat 3 tbsp oil in a large, wide frying pan over a medium high heat. Add the potatoes in a single layer, with the salt, and fry for 10 minutes without fussing, turning only when golden underneath.

  3. 3

Push the potatoes to the side, add the onions and fry for 6 minutes until soft and browned at the edges.

  4. 4

Add the beef, caraway and marjoram and toss everything together for 3 to 4 minutes until the beef is hot and the potatoes are crisp.

  5. 5

In a second pan, heat the last tbsp of oil and fry the eggs until the whites are set but the yolks are still runny.

Divide the gröstl between plates, top each with a fried egg and scatter with chives. Good with pickled gherkins on the side.
