Method

  1. 1

Toss the onion rings in 3 tbsp flour until lightly coated, shaking off the extra. Heat 4 tbsp oil in a large frying pan over a medium high heat and fry the onions in two batches for 5 to 6 minutes until deep golden and crisp. Drain on kitchen paper.

  2. 2

Pat the steaks dry and snip the fat edge a few times so they do not curl. Season with the salt and pepper and dust lightly with 1 tbsp of the flour.

  3. 3

Wipe out the pan, add the remaining 2 tbsp oil and the butter and heat until hot. Fry the steaks for 3 to 4 minutes each side for medium, longer if you like them well done. Lift onto a warm plate and rest for 5 minutes.

  4. 4

Add the last 1 tbsp flour to the pan juices and stir for 1 minute. Add the vinegar, then the stock gradually, stirring to scrape up the crispy bits. Add the marjoram and simmer for 6 to 8 minutes until it coats the back of a spoon.

Put each steak on a warm plate, spoon over the gravy and pile the crispy onions on top. Scatter with parsley. Serve with fried or boiled potatoes.
