Method

  1. 1

Coat the chicken in 120 ml of your ready made pollo asado marinade (see the base recipe). Chill for 2 to 8 hours.

    120 min
  2. 2

Cook the chicken in a hot, lightly oiled griddle pan for 6 to 7 minutes per side until charred and at 75C in the middle. Rest for 5 minutes and chop small.

    13 min
  3. 3

Toss the cabbage and radish with the lime juice and a pinch of salt. Warm your ready made refried beans (see the base recipe) until hot.

  4. 4

If your ready made tostadas (see the base recipe) have softened, crisp them for 5 minutes in a 160°C (140°C fan) oven.

    5 min
  5. 5

Spread each tostada with refried beans, then top with chicken, the cabbage mix, avocado and crumbled queso fresco.

  6. 6

Serve immediately, as tostadas go soft within minutes of being topped.

Tips

  • Top the tostadas only when you are ready to eat. Beans act as a glue and a moisture barrier, so use plenty.
  • Feta is the best UK swap for queso fresco, though it is saltier, so use a lighter hand.
  • Hold each tostada flat and eat it with your hands. Breaking a corner off is part of the fun.

Storing and freezing

Store the toppings separately in the fridge for up to 3 days. Keep unfilled tostadas in an airtight tin for a few days and re-crisp in the oven if needed.

Questions

What is the difference between a tostada and a taco?

A tostada is a flat corn tortilla fried or baked until crisp and eaten topped open faced. A taco uses a soft folded tortilla.

Can I make this dairy free?

Yes. Leave out the queso fresco and use extra avocado or a sprinkle of toasted pumpkin seeds.

Can I use shop bought tostadas?

Yes. Look for corn tostadas in the world food aisle, and check the label for gluten free if you need it.
