Method
- 1
Put each piece of chicken between two sheets of baking paper and bash it with a rolling pin to an even thickness of about 1 cm. Season both sides with the salt.
- 2
Set out three plates: the flour, the eggs, and the breadcrumbs. Coat each steak in flour, then egg, then breadcrumbs, pressing the crumbs on firmly.
- 3
Heat the oil in a large frying pan over a medium high heat. Fry the chicken for 3 to 4 minutes each side until deep golden and cooked through. Drain on kitchen paper.
8 min - 4
Mash the avocados with the juice of the lime and a pinch of salt. Mix the chipotles into a little of the avocado if you like it hotter.
- 5
Split the buns and toast them cut side down in a dry pan until golden. Spread the bottoms with avocado.
- 6
Lay a hot cutlet on each bun, cover with the mozzarella, and put the sandwiches under a hot grill for 2 minutes until the cheese melts.
2 min - 7
Finish with onion, coriander, rocket and a spoonful of chipotle, and put the lids on. Eat straight away.
