Method

  1. 1

Heat the oil in a frying pan and soften the red pepper for 4 minutes. Add the black beans and your ready made chipotle tinga sauce (see the base recipe). Simmer for 8 minutes until thick and hot all the way through.

  2. 2

Gently warm your ready made queso sauce (see the base recipe) in a small pan, stirring, until pourable and steaming. Add a splash of milk if it has set.

  3. 3

Break the tostadas (see the base recipe) into large pieces and spread them on a large warm platter or ovenproof dish.

  4. 4

Spoon the chipotle beans over the chips, then pour over the queso.

  5. 5

Scatter over the avocado, red onion, pickled jalapenos and coriander. Eat straight away while the chips are crisp.

Tips

  • Build the nachos in layers, not one big pile, so every chip gets a topping.
  • Add the queso last and serve immediately. Chips that sit in sauce go soggy within minutes.
  • Cut the beans and peppers small enough to stay on the chips and not roll off.

Storing and freezing

Best eaten at once. Keep leftover bean mixture and queso separately in the fridge for up to 3 days and reheat until steaming hot all the way through.

Questions

Are these vegetarian?

Yes. The beans, vegetables, chips and queso sauce are vegetarian if you made the base recipes as written and used a vegetarian cheese.

Can I add meat?

Yes. Stir cooked shredded chicken or crumbled chorizo into the chipotle beans before topping. Make sure meat is piping hot all the way through.

Can I use shop bought chips?

Yes, use sturdy salted corn tortilla chips, and check the label if you need them to be gluten free.
