Method

  1. 1

Heat the oil in a large frying pan over a high heat. Add the mushrooms in one layer and fry for 6 to 8 minutes without stirring too much, until deep brown and the liquid has gone.

    7 min
  2. 2

Add the garlic, jalapeño, epazote and salt and cook for 1 minute. Tip into a bowl.

  3. 3

Warm the pan over a medium heat and add one ready made corn tortilla (see the base recipe). Sprinkle cheese over half of it, add a spoonful of mushrooms and fold over.

  4. 4

Cook for 1 to 2 minutes each side until the cheese melts and the tortilla has brown spots. Repeat with the rest.

    3 min
  5. 5

Serve hot with your ready made classic guacamole (see the base recipe) on the side.

Tips

  • Do not stir the mushrooms for the first few minutes. They need contact with the hot pan to brown instead of steam.
  • Epazote is an herb used in Mexican bean and mushroom dishes. It tastes pungent and slightly medicinal. Find it dried in Mexican food shops or online.
  • Use fresh, still pliable tortillas. If they are stiff, warm them first so they do not crack when folded.

Storing and freezing

Eat straight away. Leftover filling keeps in the fridge for 3 days; reheat until steaming hot before filling fresh tortillas.

Questions

What cheese is closest to quesillo (Oaxaca cheese)?

Low moisture mozzarella is the nearest UK match. It melts and stretches in a similar way. A little mild white cheddar added to the mozzarella gives extra flavour.

Can I make these dairy free?

Yes. Use a dairy free melting cheese, or skip the cheese and add a spoonful of refried beans, which hold the mushrooms in place.

Can I use flour tortillas?

Yes, but corn tortillas are traditional and keep the dish gluten free. Flour tortillas make a softer, more floppy quesadilla.
