Method

  1. 1

Drain the tuna well and flake it into a bowl.

  2. 2

Add the gluten free mayonnaise, the chipotle in adobo sauce (see the base recipe) and half the lime juice. Mix well and season with salt. Taste and add more chipotle if you like more heat.

  3. 3

Toss the sliced red onion with the remaining lime juice and a pinch of salt. Leave for 5 minutes to soften.

    5 min
  4. 4

Spoon the tuna mixture over the tostadas (see the base recipe). Top with sliced avocado and the onion.

  5. 5

Finish with your ready made pico de gallo (see the base recipe) and serve straight away with lime wedges.

Tips

  • Drain the tuna very thoroughly. Excess water makes the mix loose and the tostadas soggy.
  • Add chipotle sauce a spoon at a time. The smoky heat builds as the mixture sits.
  • Put the tuna on the tostadas only when you are ready to eat so they stay crisp.

Storing and freezing

The tuna mixture keeps in the fridge for up to 2 days in a covered container. Assemble onto fresh tostadas just before serving. Do not freeze.

Questions

Can I use canned tuna in oil?

Yes, drain it well. Tuna in oil is richer and softer, so use a little less mayonnaise. Tuna in spring water gives a lighter mixture that suits the chipotle and lime.

How spicy is this?

Medium. The heat depends on how much chipotle sauce you add. Start with 2 tablespoons for a gentle smoky warmth and add more to taste. Remove the chilli seeds from the pico for a milder result.

Can I make it without mayonnaise?

Yes. Mash half an avocado into the tuna in place of the mayonnaise for a dairy free, egg free version. Add extra lime juice to loosen it.
