- 1
Mix your ready made homemade mayonnaise (see the base recipe) with the chipotle in adobo sauce (see the base recipe) to make a smoky pink spread.
- 2
Heat the oil in a frying pan over a medium heat. Add your ready made shredded chicken (see the base recipe) and fry for 5 minutes until hot and starting to crisp at the edges.
5 min - 3
Split the rolls and toast them cut side down in a dry pan for 1 to 2 minutes until golden.
1 min 30 s - 4
Spread the chipotle mayonnaise generously on both halves.
- 5
Pile the chicken on the bottom halves and top with avocado, tomato and lettuce. Season with a pinch of salt.
- 6
Press the lids on firmly, cut in half and serve while the chicken is hot.
Tips
- Toast the rolls so they stay crisp against the juicy filling.
- Mayonnaise and chipotle together make the classic sauce. Adjust the heat by changing the chipotle amount.
- Add refried beans on one half for a more traditional filled torta.
Storing and freezing
Eat straight away. Keep spare filling 3 days in the fridge and reheat until steaming hot all the way through.
Questions
Is a torta the same as a sandwich?
A torta is a Mexican sandwich made in a soft or crusty bolillo roll. Fillings range from chicken and beans to milanesa, ham and cheese.
What bread is best?
Bolillo rolls are traditional. In the UK, use crusty white rolls or small ciabatta rolls, which toast well and hold a heavy filling.
Can I make it gluten free?
Yes. Use gluten free crusty rolls, toasted the same way. The filling and sauces are naturally gluten free if labelled.
