Method

  1. 1

Pat the fish dry on kitchen paper. Mix the cumin, paprika and salt and rub it over the fish on both sides.

  2. 2

Heat the oil in a large non stick frying pan or griddle over a high heat until just smoking.

  3. 3

Cook the fish for 3 to 4 minutes a side, depending on thickness, until it is opaque all the way through and flakes easily. Be gentle when turning it.

  4. 4

Lift onto a plate and break into large flakes with a fork.

  5. 5

Warm your ready made corn tortillas (see the base recipe) in a dry pan for 20 to 30 seconds a side and wrap them in a clean tea towel.

  6. 6

Spread a spoonful of the creamy avocado salsa (see the base recipe) on each tortilla. Top with fish, cabbage and pico de gallo, and serve with lime wedges.

Tips

  • Make sure the pan is very hot and the fish is dry, or it will steam and stick.
  • Thick fillets such as cod or haddock flake best, whereas thin fish falls apart.
  • Turn the fish only once, and slide a thin fish slice under it.
  • Cabbage adds a clean crunch and holds up better than lettuce.

Storing and freezing

Best eaten fresh. Keeps in the fridge for up to 1 day. Cool within 1 to 2 hours and reheat gently until steaming hot all the way through. The fish does not freeze well once cooked.

Questions

Which fish works best?

Firm white fish such as cod, haddock, pollock or sea bass. Avoid very delicate fish like sole, which breaks apart.

Can I use frozen fish?

Yes. Defrost it fully in the fridge overnight and pat it very dry before seasoning.

Are these tacos gluten free and dairy free?

Yes. Fish, spices, avocado salsa, pico de gallo and masa harina tortillas contain no gluten, dairy, egg or nuts.
