Method

  1. 1

Dice the tomato flesh into 7 mm pieces, discarding the seeds and watery pulp. Tip into a sieve over a bowl, sprinkle with half the salt and leave for 10 minutes to drain.

  2. 2

Meanwhile, finely chop the onion and chillies. For a milder onion, rinse the chopped onion under cold water for 20 seconds and shake it dry.

  3. 3

Tip the drained tomatoes into a bowl. Add the onion and chillies and stir.

  4. 4

Add the lime juice, coriander and the rest of the salt. Mix gently with a spoon, not hard enough to crush the tomatoes.

  5. 5

Taste and adjust. It should taste juicy, tangy and clean, with a gentle heat. Add more lime or salt if it tastes flat.

  6. 6

Serve straight away, or chill covered for up to 2 hours. Use in the dish recipes that call for your ready made pico de gallo.

About fresh pico de gallo

Pico de gallo is a fresh, uncooked Mexican salsa of chopped tomato, white onion, fresh chilli, coriander and lime juice. It is also called salsa fresca, salsa mexicana or salsa bandera, because the red, white and green match the Mexican flag.

It is chunky rather than saucy, so it works as a topping and a side as much as a dip. The tomato gives juiciness, the onion crunch, the chilli a clean heat and the lime a sharp lift. Because nothing is cooked, the quality of the tomatoes matters more than anything else.

Spoon it over tacos, fajitas, grilled chicken or fish, eggs, quesadillas, nachos and burrito bowls. The one trick that makes it good rather than watery is to salt the diced tomatoes and drain them for 10 minutes before mixing.

Tips

  • Remove the seeds and watery pulp from the tomatoes, dice the firm flesh, then salt and drain it in a sieve for 10 minutes. This stops the pico turning into a puddle.
  • Rinse the chopped onion under cold water for 20 seconds and shake it dry if you want a milder, less sharp onion flavour.
  • Use ripe tomatoes. If yours are pale and hard, ripen them on a sunny windowsill for a few days, or use vine tomatoes, which are usually the most flavourful in the UK.
  • Add the lime juice and coriander at the last minute. Left to sit for a long time they dull and the salsa goes soft.
  • Use a serrano chilli for proper heat, jalapeño for medium and half a jalapeño with no seeds for mild.

Storing and freezing

Best eaten within a few hours. It keeps in a covered container in the fridge for up to 2 days, getting wetter each day; drain off any liquid before serving. It does not freeze well because the tomatoes turn mushy.

Questions

How long does pico de gallo last in the fridge?

Up to 2 days in a covered container, though it is best on the day it is made. Tomatoes release liquid as it sits, so drain it and refresh with a squeeze of lime before serving.

Why is my pico de gallo watery?

The tomatoes were not seeded and drained. Cut out the watery seed pulp, dice the flesh, sprinkle with salt and leave it in a sieve for 10 minutes before mixing in the other ingredients.

Can I freeze pico de gallo?

No. Raw tomatoes turn mushy and watery when thawed. If you have leftovers, cook them into a quick sauce for eggs or rice instead.

What is the difference between pico de gallo and salsa?

Pico de gallo is raw, chunky and holds its shape, with no added liquid. Most salsas, such as salsa roja, are blended or cooked and are saucy. Pico works like a fresh topping.

Is pico de gallo vegan and gluten free?

Yes. It contains only tomato, onion, chilli, coriander, lime and salt, so it is vegan, gluten free, dairy free, egg free and nut free, and also free from added sugar.

What can I use instead of coriander?

Flat leaf parsley gives a milder, fresher result. Some people find coriander tastes soapy, and parsley with a little extra lime works well for them. Mint is not traditional.
