Method
- 1
Put the chicken escalopes in a bowl with 120 ml of your ready made pollo asado marinade (see the base recipe). Chill for 30 minutes to 2 hours.
30 min - 2
Heat a griddle pan over a high heat. Cook the chicken for 3 to 4 minutes per side until charred with no pink in the middle. Rest for 5 minutes, then slice across the grain.
8 min - 3
Toss the lettuce, sweetcorn, black beans and radish with the lime juice in a large bowl and divide between 4 plates.
- 4
Top each salad with a spoonful of your ready made pico de gallo (see the base recipe) and the sliced chicken.
- 5
Thin 200 ml of your ready made creamy avocado salsa (see the base recipe) with a splash of cold water until it pours, and drizzle it over the top.
- 6
Serve straight away while the chicken is still warm.
Tips
- Pound the chicken to an even 1.5 cm thickness so it grills quickly and stays juicy.
- Slice against the grain for tender pieces.
- Add a handful of crushed tortilla chips on top for crunch if you like.
Storing and freezing
Keep the dressed salad in the fridge for up to 1 day. Store the chicken, pico de gallo and avocado dressing separately for up to 3 days.
