Method
- 1
Heat the oil in a frying pan and add your ready made frijoles negros (see the base recipe). Mash and fry for 8 minutes, stirring, until a thick, spreadable paste.
8 min - 2
Split the rolls and toast the cut sides in a dry pan for 2 minutes until golden.
2 min - 3
Spread the bean paste over the base of each roll and lay the cheese on top. Put under a hot grill for 2 minutes until melted.
2 min - 4
Add your ready made guacamole (see the base recipe), tomato, lettuce and pickled jalapeños.
- 5
Close the rolls, press down gently and cut in half.
Tips
- Fry the beans until thick. Wet beans soak the bread and make it soggy.
- Toast the cut sides to make a barrier against the fillings.
- A bolillo has a crisp shell and soft crumb. A crusty white roll is the closest swap.
Storing and freezing
Best eaten straight away. Keep spare bean paste in the fridge for up to 3 days and reheat until steaming hot.
