Method
- 1
Put the beef mince and taco seasoning mix in a bowl and mix gently with your hands for 30 seconds. Do not overwork the meat. Shape into 4 patties about 2 cm thick, pressing a shallow dent in the centre of each.
- 2
Heat a griddle pan or heavy frying pan over a high heat and brush lightly with oil. Cook the burgers for 4 minutes without moving them until well browned.
4 min - 3
Flip the burgers and cook for 4 minutes more until cooked through with no pink in the middle. Top each with a slice of cheese for the last minute and cover with a lid or foil to melt.
5 min - 4
Toast the buns, cut side down, in the pan or under the grill for 1 minute until golden.
1 min - 5
Build each burger with lettuce, tomato, the patty with cheese, a generous spoonful of your ready made guacamole (see the base recipe) and pickled red onions (see the base recipe), and serve at once.
Tips
- Use mince with at least 15% fat. Leaner meat dries out and cracks.
- Press a dent into the centre of each patty so it stays flat and does not dome as it cooks.
- Always cook burgers until there is no pink and juices run clear, with a core temperature of 75C or above.
- Serve on a lightly toasted bun to stop it going soggy.
Storing and freezing
Keep cooked patties in the fridge for up to 3 days once cooled within 1 to 2 hours. Freeze raw, shaped patties between baking paper for up to 3 months and cook from frozen until steaming hot all the way through.
Questions
Can I make these burgers gluten free?
Yes. Use gluten free burger buns or serve in a lettuce wrap, and check the other labels. The beef and spices contain no gluten.
Can I cook them on a barbecue?
Yes. Grill over medium-high coals for 4 to 5 minutes each side until no pink remains. Keep raw and cooked meat on separate plates.
Can I use turkey or chicken mince?
Yes, but turkey and chicken mince are leaner, so add 1 tbsp olive oil to the mix and make sure the burgers are cooked until no pink remains.
