Method

  1. 1

Use your ready made arroz rojo (see the base recipe), pollo deshebrado (see the base recipe) and homemade Mexican chorizo (see the base recipe) from the fridge.

  2. 2

Heat the oil in a large wide pan over a medium heat. Fry the chorizo for 4 minutes, breaking it up. Add the carrot and red pepper and cook for 5 minutes until soft.

  4. 4

Break up the chilled arroz rojo with your fingers and add it with the stock. Stir over a medium heat for 6 to 8 minutes until the rice has absorbed the stock and everything is steaming hot all the way through.

  5. 5

Taste and season. Scatter over the coriander and serve with lime wedges.

Tips

  • Use rice that was cooled quickly and chilled. Warm, soft rice turns mushy in the pan.
  • Rice must only be reheated once, so use up the whole portion and do not save the leftovers for another reheat.
  • Pour in the stock a little at a time and keep stirring so the rice stays separate.

Storing and freezing

Cool leftovers fast and chill within 1 hour. Eat within 1 day and reheat once, until steaming hot all the way through.

Questions

Can I use leftover rice from another dish?

Yes, if it was chilled within an hour of cooking and is no more than a day old. Use plain cooked rice and add a spoonful of tomato purée and a pinch of paprika for colour.

Is it spicy?

Mildly. The heat is from the chorizo, so choose a milder chorizo or add a chopped fresh chilli for more.

Can I make it without chorizo?

Yes. Double the chicken to 600 g and add 1 teaspoon of smoked paprika for flavour.
