Method
- 1
Heat 1 tbsp of the oil in a pan and soften the onion for 5 minutes. Add the garlic and cumin for 1 minute, then cool.
6 min - 2
Drain your ready made pot beans (see the base recipe) very well and pat dry. Mash in a large bowl, leaving some texture.
- 3
Stir in the cooled onion mixture, sweetcorn, your ready made chipotle in adobo sauce (see the base recipe) and the masa harina. Mix well and season with salt.
- 4
Shape into 4 patties and chill for 20 minutes so they firm up.
20 min - 5
Heat the remaining oil in a non stick frying pan over a medium heat. Cook the burgers for 4 to 5 minutes a side, until crisp and browned and steaming hot all the way through. Turn carefully.
9 min - 6
Toast the buns, then fill with lettuce, tomato, a patty and a generous spoonful of your ready made guacamole (see the base recipe). Serve straight away.
Tips
- Drain and pat the beans dry. Too much moisture makes the patties fall apart in the pan.
- Chilling firms the burgers and makes them much easier to turn. Do not skip it.
- Add the chipotle sauce a spoonful at a time. It is smoky and quite hot.
Storing and freezing
Raw patties keep in the fridge for up to 1 day or freeze for up to 3 months. Cooked burgers keep for up to 3 days. Reheat until steaming hot all the way through.
Questions
Why use masa harina in the burgers?
Masa harina absorbs moisture and binds the beans without egg. It also adds a gentle toasted corn flavour that suits the Mexican spicing.
Are these burgers vegan?
Yes, provided your buns contain no milk or egg. The beans, guacamole and chipotle sauce are plant based.
Can I make them gluten free?
Yes. The patties are already gluten free. Serve them in gluten free buns or wrapped in lettuce leaves.
