Method
- 1
Heat the oven to 250°C (230°C fan) with a heavy baking tray inside for 30 minutes.
- 2
Divide your ready made pizza dough (see the base recipe) into 4. Roll each piece into an oval about 28 cm long on a surface dusted with semolina.
- 3
Mix the cheese, tomatoes and pepper. Pile along the middle of each oval, leaving a 3 cm border, then top with the sucuk slices.
- 4
Roll the long edges inwards and pinch the two ends together to make a boat. Brush the edges with melted butter.
- 5
Slide onto the hot tray and bake for 8 minutes until the dough is starting to colour.
8 min - 6
Pull the tray out, make a well in the filling and crack an egg into each boat. Bake for 3 to 4 minutes more, until the white is set and the yolk still soft, then sprinkle with chilli flakes.
3 min 30 s
Tips
- Roll the edges well and press the ends tight. The boat needs to hold in the cheese and egg.
- Add the egg late. It only needs a few minutes in the hot oven and overcooks easily.
- If you need the egg fully set for safety, give it 5 to 6 minutes after cracking it in, until both white and yolk are firm.
Storing and freezing
Best eaten fresh and hot. Cool leftovers within 1 to 2 hours, keep covered in the fridge for up to 1 day and reheat until steaming hot all the way through.
Questions
What is pide?
Pide is a Turkish boat-shaped flatbread baked with toppings such as minced lamb, cheese, sucuk or egg. It is similar to pizza but folded at the edges and often topped with raw egg at the end.
What can I use instead of sucuk?
Use chorizo, cut into thin slices, or a spicy beef salami. Sucuk is spiced with cumin and garlic, so add a pinch of ground cumin if you swap it.
Can I leave out the egg?
Yes. The sausage and cheese pide is complete without it. Bake for the full 11 to 12 minutes.
