Method
- 1
Heat the oven to 220°C (200°C fan). Mix half your ready made harissa paste (see the base recipe) with 2 tbsp olive oil and toss with the cauliflower, chickpeas and onion on a large tray.
- 2
Roast for 25 minutes, turning once, until the cauliflower is charred at the edges and the chickpeas are crisp.
25 min - 3
Raise the oven to 250°C (230°C fan) and heat a heavy baking tray inside for 30 minutes.
- 4
Divide your ready made pizza dough (see the base recipe) in half and stretch each piece into a thin 30 cm round on baking paper dusted with semolina.
- 5
Stir the rest of the harissa with 1 tbsp olive oil and brush over the dough. Pile on the roasted vegetables and chickpeas.
- 6
Slide onto the hot tray and bake for 8 to 10 minutes until golden at the edge.
10 min - 7
Mix the coconut yoghurt with the lemon juice, drizzle over the pizza and scatter with the mint.
Tips
- Harissa varies a lot in heat. Taste yours first and halve the amount if it is very hot.
- Cut the cauliflower into small, even florets, so they char and soften at the same pace as the chickpeas.
- Dry the chickpeas well before roasting to get them crisp.
Storing and freezing
Best the same day. Cool leftovers within 1 to 2 hours, keep in the fridge for up to 2 days and reheat until steaming hot all the way through.
Questions
Is this pizza spicy?
It has a medium heat from the harissa. Use less harissa on the base and serve extra at the table if you want to control the spice.
Can I use a different vegetable?
Yes. Butternut squash, aubergine or carrots roast well with harissa. Cut them small and roast until tender and charred.
What can I use instead of coconut yoghurt?
Plain Greek yoghurt gives a thicker, tangier topping, though the pizza will no longer be vegan or dairy free. A drizzle of tahini sauce is another good option.
