Method

  1. 1

Mix the chicken with your ready made jerk marinade (see the base recipe). Cover and chill for at least 1 hour or up to 6 hours.

  2. 2

Heat the oven to 250°C (230°C fan) with a heavy baking tray inside for 30 minutes.

  3. 3

Heat the oil in a large frying pan over a high heat. Cook the chicken for 8 to 10 minutes until charred and cooked through, with no pink inside. Do not use any leftover raw marinade as a sauce.

  4. 4

Divide your ready made pizza dough (see the base recipe) in half. Stretch each piece to about 30 cm on baking paper dusted with semolina and spread thinly with the passata.

  5. 5

Scatter over half the mozzarella, then the chicken, pineapple and red onion, then the remaining cheese.

  6. 6

Slide onto the hot tray and bake for 8 to 10 minutes until golden and bubbling. Scatter with spring onion and serve.

    10 min

Tips

  • Drain and pat the pineapple dry. Wet fruit makes the top soggy and stops the cheese browning.
  • Jerk is hot. Use less marinade on the chicken if you cook for children, and serve extra at the table.
  • Cook the chicken until charred first. Raw marinated chicken will not cook through on a pizza before the crust burns.

Storing and freezing

Best the same day. Cool leftovers within 1 to 2 hours, keep covered in the fridge for up to 2 days and reheat until steaming hot all the way through.

Questions

Is jerk pizza authentic?

No. It is a fusion dish. Jerk chicken is a Jamaican barbecue classic, here put on a pizza with pineapple, which echoes the sweet fruit often served with jerk.

Can I use pork?

Yes. Jerk pork is traditional. Use 450 g of pork shoulder, cut small, and cook until there is no pink inside.

Can I make it less spicy?

Yes. Use half the marinade on the chicken and stir a spoon of mango chutney into the passata to balance the heat.
