Method

  1. 1

Mix the chicken with your ready made tandoori marinade (see the base recipe). Cover and chill for at least 1 hour.

  2. 2

Heat the oven to 240°C (220°C fan) with a large baking tray inside so it gets very hot.

  3. 3

Heat the olive oil in a frying pan over a high heat and cook the chicken for 6 to 8 minutes until charred and cooked through with no pink inside.

    7 min
  4. 4

Divide your ready made pizza dough (see the base recipe) in half and stretch or roll each piece into a thin round. Spread each with the passata, leaving a border.

  5. 5

Scatter over the mozzarella, chicken, onion and pepper. Slide onto the hot tray.

  6. 6

Bake for 10 to 12 minutes until the crust is golden and the cheese is bubbling.

    11 min
  7. 7

Stir the yoghurt and mint together, drizzle over the pizzas and serve.

Tips

  • Cook the chicken first. Raw marinated chicken on a pizza would not cook through before the dough burns.
  • Heat the tray in the oven first for a crisp base.
  • Spread the passata thinly. Too much sauce makes the middle soggy.

Storing and freezing

Eat the same day. Leftover slices keep for 2 days in the fridge, cooled within 1 to 2 hours, and are best reheated in a hot oven until steaming hot all the way through.

Questions

Can I use shop bought naan as the base?

Yes. Top plain naan breads and bake at 220C for 8 minutes. It is a quick midweek version, and you can skip the pizza dough.

Can I use leftover tandoori chicken?

Yes. Chop it up and add it just before the pizza goes in, since it is already cooked.

Is this suitable for coeliacs?

No. The pizza dough contains wheat flour, so this version is not gluten free.
