Method

  1. 1

Heat the oven to 200°C (180°C fan). Oil a 30 x 40 cm baking tray with 1 tbsp olive oil.

  2. 2

Divide your ready made pizza dough (see the base recipe) in two, one slightly larger. Stretch the larger piece to fit the tray, pushing it right into the corners.

  3. 3

Scatter half the grapes over the dough, with half the sugar, half the rosemary and the lemon zest.

  4. 4

Stretch the second piece of dough to the same size and lay it over the top. Press the edges down. Scatter over the rest of the grapes, sugar and rosemary and press the grapes in lightly.

  5. 5

Drizzle with the remaining olive oil and the salt. Cover and leave for 15 minutes.

Tips

  • Traditional schiacciata all'uva uses small wine grapes with seeds. Seedless red grapes are the easiest UK swap.
  • Press the grapes in firmly, or they roll off as the dough puffs up.
  • A little salt and rosemary are the key. They stop the bread tasting like plain cake.

Storing and freezing

Keep covered at room temperature for 1 day, or in the fridge for up to 3 days. Freeze slices for up to 2 months and warm in a 160C oven for 8 minutes.

Questions

Is schiacciata all'uva sweet or savoury?

It is both. The grapes and sugar are sweet and sticky, while olive oil, salt and rosemary give it a savoury edge. It is eaten as a snack or with cheese in Tuscany in autumn.

Can I use white grapes?

Yes. Green seedless grapes work too, though red grapes give a deeper colour and flavour.

Can I add cheese?

Yes. Serve slices with ricotta, pecorino or a soft goat's cheese. This stops the plate being dairy free.
