Method

  1. 1

Heat the oven to 240°C (220°C fan) with two large baking trays inside. Have your ready made pizza dough (see the base recipe) risen and divided into two.

  2. 2

Heat the oil in a frying pan over a high heat. Fry the chicken for 5 minutes until golden.

    5 min
  3. 3

Add your ready made karahi masala base (see the base recipe) and simmer for 8 minutes, until the chicken is cooked through and the mixture is very thick, not saucy. Cool for 10 minutes.

    8 min
  4. 4

On a floured surface roll or stretch each piece of dough into a 30 cm round. Slide onto baking paper.

  5. 5

Spread the chicken karahi over the dough, leaving a 2 cm edge. Scatter with the mozzarella and red onion.

  6. 6

Slide the pizzas on their paper onto the hot trays and bake for 12 minutes, until the crust is golden and the cheese is bubbling.

    12 min
  7. 7

Scatter over the green chilli and coriander, slice and serve.

Tips

  • Cook the topping down until thick. A saucy topping makes a soggy base.
  • Preheating the trays gives a crisper crust.
  • Roll the dough thin if you like a crisp base, or leave it thicker for a bready crust.

Storing and freezing

Best eaten fresh. Leftover slices keep 1 day in the fridge and reheat in a hot oven for 8 minutes until steaming hot all the way through.

Questions

Can I use leftover chicken karahi?

Yes. Use about 400 g of cooked chicken karahi, reduced in a pan until thick, instead of making the topping from scratch.

Can I make it without cheese?

Yes, it is also good without cheese. Use a dairy free cheese if you need it dairy free, but check the label for nuts.

Can I use a shop bought pizza base?

Yes. Use two ready made 30 cm bases and bake for 10 to 12 minutes following the pack instructions.
