  3. 3

Divide your ready made pizza dough (see the base recipe) in half and stretch each piece into an oval about 30 cm long. Place on baking paper.

  4. 4

  5. 5

  6. 6

Finish with big spoonfuls of your ready made hummus (see the base recipe), the lemon juice and parsley. Serve straight away.

Tips

  • Add the hummus after baking. In a hot oven it dries into a crust and loses its creaminess.
  • Za'atar is a thyme, sesame and sumac blend. Check the label for added salt if you are cutting back.
  • Roast the vegetables in a single layer, so they brown instead of steaming.

Storing and freezing

Best eaten fresh. Cool leftovers within 1 to 2 hours, keep the pizza and hummus separate in the fridge for up to 2 days and reheat the pizza until steaming hot all the way through.

Questions

Is hummus pizza vegan?

Yes, when the hummus is the base recipe, made from chickpeas, tahini, lemon, garlic and olive oil. The dough and vegetables are plant based too. It contains sesame from the tahini.

Can I use shop bought hummus?

Yes. Plain hummus works well. Check the label for added dairy or other allergens.

What is za'atar?

Za'atar is a Middle Eastern spice mix of dried thyme or oregano, sumac and toasted sesame seeds, often with salt. It is sold in most supermarkets.
