Method

  1. 1

Heat the oven to 220°C (200°C fan). Wilt the spinach in a pan with the olive oil for 1 minute, tip into a sieve and press out the water. Chop roughly.

  2. 2

Roll your ready made pizza dough (see the base recipe) into a rectangle of about 30 x 38 cm on a sheet of baking paper dusted with semolina.

  3. 3

Spread your cold ready made ragù (see the base recipe) over the dough, leaving a 2 cm border. Cold ragù is thick and will not leak. Scatter over the spinach, mozzarella and parmesan.

  4. 4

Roll up from a long edge, tucking in the sides as you go, and finish with the seam underneath. Pinch the ends shut.

  5. 5

Lift the loaf, paper and all, onto a baking tray. Brush with beaten egg and cut 4 slits in the top to let steam out.

  6. 6

Bake for 25 to 30 minutes until deep golden brown. Rest for 10 minutes before slicing, so the filling sets.

Tips

  • Use ragù that has been chilled. A loose, hot sauce runs out of the seams and makes the base soggy.
  • Do not overfill. Too much filling makes the roll burst in the oven.
  • Serve with extra warmed ragù or tomato sauce for dipping.

Storing and freezing

Cool within 1 to 2 hours, then keep covered in the fridge for up to 3 days. Reheat slices in a 190C oven for 12 minutes until steaming hot all the way through. Freeze slices for up to 2 months.

Questions

What is stromboli?

Stromboli is an Italian-American baked roll of pizza dough filled with cheese and meats or vegetables. It is rolled up like a swiss roll, where a calzone is folded in half.

Can I use leftover bolognese?

Yes, if it is thick and chilled. Reduce a looser sauce for 10 minutes first, then cool it completely before rolling.

Can I make it vegetarian?

Yes. Swap the ragù for 300 g of roasted vegetables and 3 tbsp of tomato purée, and check the parmesan is vegetarian.
