Method
- 1
Heat a heavy baking tray in the oven at 250°C (230°C fan), or its highest setting, for at least 30 minutes.
- 2
Fry the mushrooms in the olive oil over a high heat for 5 minutes until the water has gone and they are golden. Season with a pinch of salt and leave to cool.
5 min - 3
Divide your ready made pizza dough (see the base recipe) in half and stretch each piece to about 30 cm. Place on baking paper dusted with semolina.
- 4
Spread your ready made basic tomato sauce (see the base recipe) over each base, leaving a 2 cm rim, then scatter over the mozzarella.
- 5
Mark each pizza into four quarters with the back of a knife. Top one quarter with ham, one with mushrooms, one with artichokes and one with olives.
- 6
Slide onto the hot tray and bake for 8 to 10 minutes until the crust is blistered and the cheese bubbling. Tear over the basil and serve.

Tips
- Cook the mushrooms first. Raw mushrooms release water in the oven and flood the quarter they sit on.
- Pat the artichokes and olives dry on kitchen paper so oil does not pool on the cheese.
- Use only a thin layer of sauce. The four toppings are heavy and a thick layer makes the middle of the base soft.
Storing and freezing
Best eaten the same day. Cool leftovers within 1 to 2 hours, keep covered in the fridge for up to 2 days and reheat until steaming hot all the way through.
Questions
Is this a traditional Italian pizza?
Yes. Quattro stagioni is a classic pizzeria order, usually with ham, mushrooms, artichokes and olives, each representing a season. Some places swap in peppers or prosciutto.
Can I make it vegetarian?
Yes. Leave out the ham and use 100 g of roasted red peppers or sundried tomatoes instead. Check the tomato sauce and mozzarella are vegetarian, since some cheeses use animal rennet.
Can I make it ahead?
Shape and top the pizzas up to 20 minutes before baking, then bake straight away. Longer than that and the moisture soaks into the dough.
