  3. 3

Rest the chicken for 5 minutes, then slice. Check there is no pink in the centre.

    5 min
  4. 4

Warm your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.

  5. 5

Spread each tortilla with your ready made guacamole (see the base recipe). Top with chicken, lettuce and tomato.

  6. 6

Fold in the sides and roll up tightly. Cut in half to serve.

Tips

  • Never reuse the raw marinade as a sauce. Throw it away.
  • Rest the chicken for 5 minutes so the juices stay in.
  • Wrap tightly in baking paper for a packed lunch.
  • Use a hot pan for a good char.

Storing and freezing

Keep the chicken in the fridge for up to 3 days. Assembled wraps keep for 1 day chilled. Eat guacamole the day it is made or within 24 hours.

Questions

Can I use chicken breast?

Yes. Slice thick breasts in half horizontally so they cook evenly in 4 to 5 minutes a side. Breast dries out more easily than thigh.

Can I make the wraps ahead?

Yes, up to 12 hours ahead. Wrap tightly and keep chilled. Add the lettuce just before serving to keep it crisp.

Are the wraps dairy free?

Yes. The chicken, marinade, guacamole and flour tortillas are all dairy free.
