Method
- 1
Toss the prawns with your ready made guajillo adobo paste (see the base recipe) and the lime juice. Leave for 15 minutes in the fridge.
15 min - 2
Heat the oil in a frying pan over a high heat. Cook the prawns for 1 to 2 minutes on each side until pink and cooked through. Take them off the heat straight away.
3 min - 3
Check your ready made tostadas (see the base recipe) are crisp. Warm them for 3 minutes in a low oven if they have softened.
3 min - 4
Spread each tostada with a thick layer of your ready made classic guacamole (see the base recipe).
- 5
Add a little shredded lettuce, then the warm prawns.
- 6
Top with sliced radish and coriander. Eat straight away before the tostadas soften.
Tips
- Assemble just before eating. A tostada left under guacamole goes soft within minutes.
- Cut the prawns in half lengthways so they cook in under 2 minutes and sit flat on the tostada.
- A squeeze of lime over the finished tostadas brightens the smoky chilli.
Storing and freezing
Best eaten fresh. Keep the components separate: cooked prawns for up to 1 day in the fridge, guacamole pressed with cling film for up to 1 day.

Many supermarkets and world food shops sell them, or make your own from corn tortillas baked until crisp.
Are these tostadas gluten free?
Yes, if the tostadas are made from corn only. All the toppings are free from gluten, dairy, egg and nuts.
