  3. 3

Warm a dry pan. Place a tortilla in it, add cheese and a spoonful of mushrooms on one half, and fold over.

  4. 4

Press gently and cook for 2 minutes per side, brushing with a little oil, until golden and the cheese melts.

    4 min
  5. 5

Repeat with the remaining tortillas. Serve with your ready made lime crema (see the base recipe) for dipping.

Tips

  • Cook mushrooms until their water has gone, or the quesadilla will be soggy.
  • Epazote has a distinctive herbal flavour; coriander gives a fresh substitute.
  • Do not overfill, or the cheese leaks out.

Storing and freezing

Best fresh. The mushroom filling keeps 3 days chilled. Reheat quesadillas in a dry pan until hot and crisp.

Questions

What is epazote?

Epazote is a pungent Mexican herb, often added to beans and mushrooms. It is sold dried in specialist shops, and coriander is a fine swap.

Can I use flour tortillas?

Yes, but the dish is then no longer gluten free, and they brown faster.

Which cheese is best?

Oaxaca cheese is traditional. Mozzarella is the easiest UK match, as it melts and stretches.
