  2. 2

In another pan, warm your ready made refried beans (see the base recipe) with 3 tbsp water, stirring, for 5 minutes until hot and loose.

  3. 3

Warm your ready made flour tortillas (see the base recipe) one at a time in a dry frying pan for 20 seconds on each side, until soft and flexible. Keep them wrapped in a clean tea towel.

  4. 4

Toss the avocado with the lime juice. Lay a tortilla flat and spoon a line of rice, beans, avocado and lettuce just below the centre.

  5. 5

Fold in the sides, then roll up tightly. Repeat with the rest of the tortillas.

  6. 6

Brush a frying pan with the oil and toast the burritos seam side down for 2 minutes, then turn and toast for 1 minute more, until golden. Serve at once.

Tips

  • Do not overfill the burritos. About 3 heaped tablespoons of filling per tortilla gives a roll that closes and holds together.
  • Warm the tortillas first. Cold tortillas crack when you fold them.
  • Add pickled jalapeños or a spoonful of salsa to each burrito for extra heat.

Storing and freezing

Wrap cooled burritos individually and keep in the fridge for up to 2 days. Freeze wrapped in foil for up to 1 month and reheat from thawed until steaming hot all the way through, about 20 minutes at 180 degrees C.

Questions

Can I make these gluten free?

Yes. Use a gluten free wrap and check the label. Corn tortillas crack when rolled, so choose large gluten free wraps instead.

Can I freeze them?

Yes, without the avocado and lettuce. Wrap the burritos tightly, freeze for up to 1 month, thaw in the fridge overnight and reheat until steaming hot all the way through.

Are they vegan?

Yes. The rice, refried beans and flour tortillas are all vegan, and there is no cheese in the filling. Check the tortilla and bean labels if you use shop bought.
