Method
- 1
Heat the oven to 220°C (200°C fan) and put a large roasting tin in to heat.
- 2
Boil the potatoes in salted water for 8 minutes, then drain well and let them steam dry in the colander for 5 minutes.
13 min - 3
Toss the potatoes in the olive oil and a pinch of salt. Tip into the hot tin and roast for 20 minutes.
20 min - 4
Stir the potatoes with your ready made al pastor marinade (see the base recipe) and the onion wedges. Roast for another 20 minutes, adding the pineapple for the last 10 minutes, until crisp and deep red.
20 min - 5
Spoon on to a platter and drizzle with the lime crema.
- 6
Scatter over the coriander and serve while hot.
Tips
- Roughing up the parboiled potatoes in the colander gives crisp edges.
- Add the marinade only after the first 20 minutes. The sugars in the pineapple burn if they roast too long.
- Cut the pineapple small so it caramelises rather than steams.
- Serve the lime crema cold so it contrasts with the hot potatoes.
Storing and freezing
Keeps in the fridge for up to 3 days, cooled within 1 to 2 hours. Reheat in a hot oven until steaming hot all the way through. Keep the crema separate and cold.
Questions
Can I make it vegan?
Yes. Use the dairy free lime crema from the base tips, such as coconut yoghurt with lime juice and salt.
Which potatoes are best?
Waxy potatoes such as Charlotte or Maris Peer hold their shape. Floury potatoes such as Maris Piper give a fluffier inside but crumble at the edges.
Is it gluten free?
Yes. Potatoes, pineapple, the marinade and lime crema contain no gluten, egg or nuts. The crema contains dairy.
