Method

  1. 1

Put the pork, onion halves and water in a large pot with salt. Bring to a simmer and skim off the foam, then cover and cook gently for 1 hour, until the pork is almost tender.

    60 min
  2. 2

Stir in your ready made pozole verde base (see the base recipe) and simmer for 25 minutes, until the pork is completely tender.

    25 min
  3. 3

Add the hominy and simmer for 15 minutes. Do not boil hard or the pumpkin seed broth can split.

    15 min
  4. 4

Taste and adjust the salt, then add a squeeze of lime.

  5. 5

Serve in bowls with the cabbage, radish, avocado and lime wedges, and tostadas on the side.

Tips

  • Keep the broth at a gentle simmer once the base goes in. Pumpkin seed sauces can separate if boiled hard.
  • Pork shoulder with a little fat keeps the meat juicy over a long simmer.
  • Fresh avocado at the table is traditional and balances the lime and herbs.

Storing and freezing

Keeps in the fridge for 3 days. Freeze in portions for up to 3 months and reheat gently until steaming hot all the way through.

Questions

Why is the broth green?

The base is made from tomatillos, pumpkin seeds, jalapeno and coriander blended together, which gives a fresh green colour and a creamy body.

Is green pozole spicy?

It is mild to medium. The heat comes from the jalapenos in the base, so choose milder or fewer chillies if you make it for children.

Is it nut free?

Yes. Pumpkin seeds are a seed, not a nut. If anyone has a seed allergy, avoid this recipe.
