Method

  1. 1

Heat the oven to 200°C (180°C fan). Prick the potatoes, rub with the olive oil and a pinch of salt and bake for 1 hour until soft in the middle.

    60 min
  2. 2

Meanwhile, marinate the steak in your ready made carne asada marinade (see the base recipe) for 2 to 4 hours in the fridge. Discard the used marinade.

  3. 3

Pat the steak dry and cook on a very hot griddle for 3 minutes each side. Rest for 5 minutes and chop small.

    10 min
  4. 4

Split the hot potatoes open and fluff the insides with a fork. Sprinkle in the cheese so it melts.

  5. 5

Pile on the steak, drizzle with lime crema (see the base recipe), and top with avocado and coriander. Serve with lime wedges.

Tips

  • Bake the potatoes until the skins are crisp and the insides fluffy, not just soft.
  • Chop the steak small so it stays on top of the potato.
  • Add pico de gallo or pickled onions for freshness.

Storing and freezing

Keeps in the fridge for up to 3 days if cooled within 1 to 2 hours. Reheat until steaming hot all the way through.

Questions

Can I use sweet potatoes?

Yes. Bake sweet potatoes for 45 to 55 minutes and top the same way. The sweetness works well with the garlicky steak.

Is this dish gluten free?

Yes. Potatoes, steak, marinade, cheese, crema and avocado contain no gluten, and there are no eggs or nuts. Check labels on any shop bought crema.
